Super Soup

I was busy. You must be starving.

First off from the farmers market:
Milk
Eggs
Butter
Lamb shank
Onions
Apples
Green beans
Peppers
Tomato







October in New York State grow me some:
Sweet Potatoes
Leeks
Cauliflower
Kale
Lettuce
Eggplant

Last night Chef James made a super soup that consisted of white beans, leeks, kale, carrots, onions, celery, delicata, baby fingerling potatoes, tomatoes, spinach, arborio rice, parmigiano rind ( for thickening and flavor) and two slices of fresh italian bread (at the bottom of the bowl). Now you know what a super soup is. I know it sounds like too much in one bowl but really it is everything you ever wanted or needed in one bowl. It is rich when it should be and thick when it needs to be it is calming and exciting, it is like a feather bed and down comforter, I just want to roll up and fall asleep in it. So it is delicious which is great because we have a lot of it...a lot. There was also a warm salad appetizer of artichokes and arugula served over white beans, and dressed in olive oil and aioli along with a slice of bread blanketed in goat cheese. Mmmm goat cheese be the end of me. Just another Monday night dinner at home. There are some great Turkish recipes using leeks so I will give one of those a shot later this week. I'll let you know how it goes.
