
Last weekend was by all means filling and scrumptious. We started the weekend off with a pile of fluffy pancakes topped with a spiced, maple apple compote. Naturally we used the apples just purchased from the market. Served with a piping hot cup of coffee and the weekend NYT and there you have a breakfast fit for the lodge in Aspen or some other fantastic winter destination.
For dinner on Sunday Chef out did himself. All feelings towards cooked fish were put aside and seemingly forgotten. For someone who apparently hates fish, he does one hell of a job cooking it. Every time pesco hits the plate at the hands of Chef it tastes something supreme and looks just as beautiful. Chef shocked and delighted the table with crusted salmon filet with a warm mango chutney, butternut puree dressed the plate and an assortment of potatoes spiced with Indian flavors. I know. Yes, I am serious. Yes, it was delicious. If I were Michelin and this were a restaurant I would give it 3 stars.
OMG. OMG. For dessert he made peanut butter cupcakes with milk chocolate frosting.
It was really just a fun dinner. Looking forward to dinner this weekend. No pressure though.
